- 2 tsp Ground cumin
- 2 tsp Smoked paprika
- 2 tsp Salt
- 2 tsp Sugar
- 1 tsp Garlic powder
- 1 tsp Dried onion OR onion powder
- 1/2 tsp Cayenne powder
Chicken Fajitas
- 3 tbsp Olive oil
- 4 Chicken breasts, boneless, skinless
- 3 Sweet bell peppers (1 each – red, yellow, green)
- 1 Onion, sliced
- 1 pkg Soft tortilla shells
- 1/3 cup Fajita spice mix (listed above)
- Various toppings
Instructions
- Mix the spices together and either store in an air-tight container for later use, OR make Chicken Chipotle Fajitas immediately
How to Make Chicken Fajitas
- Heat 1 tbsp of oil in a large, non-stick pan/skillet on medium-high heat
- Add chopped chicken breasts and stir fry until cooked (approx. 5 minutes)
- Set cooked chicken aside on a clean plate
- Heat 2 tbsp of oil in the same large, non-stick pan/skillet on medium-high heat and add chopped bell peppers (red, yellow, green), chopped onion, and prepared seasoning
- Stir fry until vegetables are cooked to your liking (approx. 5 minutes)
- Add cooked chicken to skillet once again, until heated and flavoured with the vegetable and seasoning mix
- Remove from heat and divide evenly over tortilla shells
